Pesto Chicken pinned here
This was good. I used store bought pesto. You could really make this for any number of people. Just reduce or double the recipe. I think this chicken would make an excellent panini...with fresh mozzarella & tomato on it. Yum! No changes to the recipe. The boys even liked it.
Garlic Lemon Chicken with New Potatoes & Green Beans pinned here
This was easy and delicious. I served it over quinoa (pronounced keen-wa...so weird!). The quinoa smells funny but it tasted good with this dish served over top. I've been wanting to try to sub this for rice/couscous when I can because it is 100% whole grain. Funny story...so the quinoa was boiling and Wilson was asking me what it was. On a whim I said oh it's quinoa- you used to love this stuff when you were little! Then Andy jokingly bought into it too. But, it worked! Wilson ate it and tonight he was talking about how he still likes quinoa. Oops. I don't recommend lying to your children. ;)
One change to the recipe: I don't cook chicken with bones or skin. Absolutely no way never ever gonna happen. So I just used chicken breasts. The end.
Chicken Tortilla Soup from Brown Eyed Baker found here
This is supposed to be like Max & Erma's. I've never had their tortilla soup but this is good. I used 1 anaheim pepper which was 1/4 cup. I also halved the amount of cayenne pepper. The soup wasn't very spicy. I don't used chicken thighs (I know I have a lot of my chicken rules in this post. sorry.) so I just used 2 chicken breasts. If you are making this and want more than 4 servings double the recipe. It is a small batch of soup. (The first time I used serrano peppers (I think) which made the soup much spicier. I didn't know what an anaheim pepper looked like.)
These are the recipes worth trying. I made 3 others that were just so-so. You aren't missing anything and I won't be making them again. They were fine, just not good enough for me to make again. I've already deleted them from my pin board.

Blogger Doesn't do well with math.
So apparently I was a little ahead of the game. When I logged into blogger it said 500th post but my dear, sweet husband added up the posts from each year and informed me that I was NOT to 500 yet. :) So I think this is 498 or something. Almost there!
We've had a great weekend! Friday night Andy made homemade pizza- yum! We hung out around the house and after the boys went to bed watched The Holiday. Saturday I did some cleaning - I forgot to tell you I got a new vacuum! I now have the best vacuum I've ever owned. It works SO well. You wouldn't believe the amount of dirt and dust it gets each week. Crazy! I got it on Black Friday at Kohl'*s. For a really great deal. My dad let me spend part of our christmas money premature-ly since it was such a good deal. I have used it 3-4 times since just because I like it so much. Don't worry, that will wear off I'm sure! Every time I vacuum I show Andy the dirt inside and we're both amazed.
Back to Saturday...in addition to some cleaning we had the church christmas pageant rehearsal Saturday morning, then I ran some errands and did some Christmas shopping. I made pepperoni rolls and potato/broccoli/cheddar soup for dinner. Once the boys were in bed I wrapped presents while we watched National Lampoon's Christmas Vacation. Not my favorite but it was still fun to watch! Tonight is the annual variety show and christmas pageant followed by the youth coffee house. Looking forward to the variety show acts!

Cheesy Veggie Soup
I've gotten a lot of good recipes from co-workers. I love when we have snack days and people bring various foods to share. I've gotten a lot of good recipes this way! I'm glad I finally made a pot of this soup at home!
6 cups water
2 cans chicken broth
1/2 cup diced onion
2 cups diced potato
2 cups diced celery
salt and pepper
Pour these ingredients into a large pot. Cook for about 20 minutes on med-high heat.
Now add:
2 cans cream of chicken soup (I used 98% fat free)
1 1/2 pounds velveeta, cubed (used 1/2 less fat velveeta)
1 1/2 bags california blend frozen veggies (broccoli, cauliflower, carrots)
Turn heat down so you don't burn the cheese on the bottom of the pan (I'm not saying I did this or anything...). Cook until cheese is melted and soup is heated through.

Pasta e Fagioli
Yum! This soup really hit the spot. I made several modifications so I'll link the original recipe here and post what I did below. Andy and I both liked the soup. My boys don't care for soups so they each had to take 1 bite. (Then they ate chicken nuggets). I served this with breadsticks and sprinkled parmesan cheese on top of our soup. Yum! I got to use my new Le Creuset 5 qt Dutch Oven and it was VERY full! Mom and Dad are going to enjoy some leftovers for dinner tonight. I'll be eating it for lunch twice this week and Andy and I will eat leftovers for dinner Wednesday night. This makes a big batch of soup!
Ingredients:
2 tbsp. butter, divided
1 (12 oz.) package sweet Italian sausage, casings removed
1 medium onion, finely chopped
4 cloves garlic, minced
4 carrots, thinly sliced
4 stalks celery, thinly sliced
1 (28 oz.) can petite diced tomatoes
1can cannelini beans, drained and rinsed
48 oz. reduced-sodium beef broth
1 (28 oz.) can tomato sauce
2 tsp. dried parsley
1/2 tsp. dried basil
1 tsp. salt
2 cups small dry pasta (I used ditalini)
Directions:Melt 1 tablespoon of the butter in a Dutch oven or large stockpot over medium-high heat. Add the sausage to the pot and brown, crumbling as it cooks. Once the sausage is browned, remove it from the pot with a slotted spoon and discard any excess grease (if you use chicken sausage you won't have any excess grease! Melt the remaining tablespoon of butter in the pot. Add the onion, garlic, carrot and celery, and saute over medium heat until vegetables are soft, 8-10 minutes. Return the sausage to the pot, add the can of diced tomatoes with juices, stir briefly, and simmer for 10 minutes.
Add the beans, beef broth and tomato sauce to the pot. Add in all of the seasonings, stir well, increase the heat to high and bring to a boil. Once boiling, reduce the heat to low, cover and simmer at least 30 minutes.
Add the dry pasta and continue to simmer on low for another 30 minutes. Serve with shredded parmesan cheese.

Updates
I'm feeling a little less stressed since my last post- it's Friday! I get to "sleep in" tomorrow! I've bought most of my secret santa gifts. This weekend I need to write my clues and get the gifts ready. Last night I did some online shopping for Christmas so that was a good feeling. Still have a few more gifts to go buy. I called our Dr.'s office on Thursday and had them call CCH to check on Ty's appointment. (Thanks for the advice, Tricia!) Cincy said they would call us this afternoon or Monday afternoon with an appt time. They are trying to schedule the appointments with the neurologist and opthamologist at a time when the ENT will be available if necessary. Why would we need an ENT? I wasn't sure, they hadn't mentioned that before. Anyway, they didn't call today so I'm hoping to hear from them on Monday.
Dinner tonight was GOOD! I tried two new recipes. First, Carol's pepperoni rolls. This was a big success for me! I have always avoided yeast dough recipes because they didn't turn out for me the couple times I had tried them. Well over Thanksgiving I sat and watched Carol make her dough- and took notes!! She was making cinnamon rolls but her basic dough recipe can be made into cinnamon rolls, pepperoni rolls or dinner rolls. I have always loved her breads- and this time it tasted right! On a 1-10 scale Andy gave them an 8 1/2, which I thought was pretty awesome! If anyone wants the recipe let me know and I"ll post it.
I made Cheddar Broccoli Potato Soup to go with the rolls. Yum! It was easy and delicious and Andy and I both really enjoyed it. Here is the recipe. Perfect for a cold night! If only we had a fireplace!
This Sunday night the boys will be in our church's Christmas program. Luke will be a sheep and Wilson a shepherd. I love watching them in the play! Afterwards the youth group host a Coffee House. It's a fun evening. Hopefully tomorrow I can post some pictures from Thanksgiving.
