I keep meaning to update but we are staying busy this summer! I've tried several new recipes and some are keepers.
Stuffed Peppers Enchiladas- These were delicious to me...they are stuffed with quinoa, black beans, diced green chilies, cheese, and drizzled in enchilada sauce. Andy liked the filling but didn't so much care for them in the peppers. I have since made the quinoa filling as a side to go with honey lime grilled chicken. I like scooping the quinoa up with tortilla chips. Yum!
Lemon Dessert- This was so good! I have made this with chocolate pudding countless times (aka Mountain Mama Mudslide, one of Andy's faves) but wanted to try the lemon for summer. It was delicious! I want to make it again!
Homemade Oatmeal Creme Pies- Oh Yes I Did! I saw this pin and had to make them for my dad. Growing up oatmeal creme pies were always in the cookie jar. The cookies were delicious. They were thin which was good when you are stacking two with frosting. Dad thoroughly enjoyed these as did the boys. I didn't actually eat one made into a pie. I did try a bite of one with frosting and they were good! Loved the plain oatmeal cookie though.
Ranch Potatoes- So I actually changed this recipe more than I realized. The link is Zesty Italian Potatoes. But at the grocery I was thinking Ranch...so I bought a packet of the powder ranch dressing. After cubing the potatoes and dumping them in a large ziploc bag I drizzled some olive oil on them. Then sprinkled the ranch powder on. I baked them at 400 for about 30-40 minutes until they were done. YUM! I've made this at least 3 times...didn't add parmesan cheese either. They don't need it!

Our Valentine's Day
I made two double batches of rice krispie treats, cut them into heart shapes with a cookie cutter & dipped half them in dark chocolate. Luke sprinkled on the valentine colored sprinkles. I actually didn't eat any with the chocolate on them. I was too busy eating the rice krispie treat scraps from cutting them out with the cookie cutter. I'd forgotten just how good simple rice krispie treats taste. Yum! The boys took these to their school Valentine parties. I saw the idea on Pinterest but now can't find the pin.
Here is what the boys took their teachers & assistants. Rolo pretzel turtles. So easy and yet delicious! We made them with Valentine colored M&M's instead of pecans on top, you can do either. My grandmother told me about these last year and we've made them several times. They are all over Pinterest too. To make: Lay pretzels out on cookie sheet. I like to use the square Snyder's pretzels but you can use the twist kind too. Open your rolo's and place one on top of each pretzel. Bake at 350 for 4 minutes. Push an M&M or a pecan on the top of the rolo and smush it down a bit. Let them cool completely. I usually pop the pan into the freezer after they have cooled on the counter for a while. Just to make sure the chocolate has hardened.
Here is Wilson's Lego Valentine Box. He also ended up adding police pictures from the Internet all over the top but here it is just looking like a Lego! The knobs are tp rolls cut down and covered with wrapping paper. Luke made his bag at his school party so he didn't need to make a box at home.
My valentine and I ordered take-out from PF Chang's. The boys had heart shaped pancakes made by their daddy. I had a lovely bouquet of roses on my desk when I got to school on Tuesday. Andy had snuck them into my office Monday afternoon while I was at a meeting at another school. It was a great surprise!

Pinterest Food on the Menu
This week's menu featured a few more Pinterest inspired recipes. I promise I pin lots of things that are not recipes! It's just I have to cook dinner so I might as well make it fun and interesting!
Crockpot BBQ Chicken - This was good. Will make again. It was good as leftovers too! We had this with "the Best Broccoli of your life" and my favorite garlic rice pilaf (from good ol' Annie's Eats). OK so the broccoli was okay, I ate it and enjoyed it but no one else did. And I would be just find not eating it that way again. We decided plain steamed broccoli is enough for us! This one involves roasting, lemon zest, parmesan cheese etc. Good but probably won't make it again. Aleady deleted the pin. Everybody loves the rice recipe. So good. You should definitely try that one!
Easy Breakfast Potatoes - These were pretty good. I might make them again but they weren't spectacular. But easy! We had these with turkey sausage egg mcmuffins. I learned from Pinterest to cook eggs in a muffin tin and bake them. We like to scramble the eggs before baking so the yolk is mixed in. Then we put them on whole wheat english muffins with turkey sausage and a slice of cheese. Yum! This is my second time to make the mcmuffins.
Whipped Cream Cheese Frosting- you all, I came home from work on Monday and the house smelled like cake. Andy had made me a birthday cake! It was a surprise though and I wasn't allowed to know what kind. It about killed me. Surprises aren't really my thing I guess. Come to find out he had seen me on Pinterest and saw me pin this icing and I had said something along the lines of cream cheese frosting being the only kind I actually like. While I was at work on Monday he got on Pinterest, found my recipe board, got this recipe, and frosted the cake he made me with it. How sweet was that? Just wait till you see pics of what the cake looked like. I almost cried because he made me feel so special. I'll post pics and tell you about my birthday this weekend.

Back in the Kitchen
So I have been really struggling with menu planning lately. I finally told myself enough was enough and I had to make a full week's menu. Hopefully it will continue. It takes a long time to plan the whole week and make the grocery list. Pinterest (my new favorite thing) has given me a few new recipes to try. Pinterest = love. I have so many ideas for things! It is a great resource. I still have my favorite food blogs of course. Here are three new ones this week that are worth mentioning!
Creamy Chicken Taquitos from Annie's Eats. I really liked these. Wilson & Luke did not...but I really feel like they should have! It has ingredients in it that they like. Oh well. I'll make these again. I did double the recipe and ended up with about 20 taquitos I think. I wanted leftovers! I also made my favorite salsa from Pioneer Woman to dip these in. Yum!
Last night I made Wilson's birthday cupcakes for him to take to school. He wanted white cupcakes with chocolate icing. I chose the vanilla cake recipe found here and hershey's perfectly chocolate icing here. I took 1 bite of a cupcake and it was good. Andy tasted the cupcake with icing and said it was really good. Wilson told me this afternoon that his friends loved the cupcakes.
I'll be making cupcakes again next week for Luke to take to school. He hasn't decided what kind he wants yet. The cakes for their friend party next week are: Wilson- police badge cake...Andy is in charge of this one! Luke wants cake pops just like last year.
The roast I was supposed to put in the crockpot tonight is still in the freezer...so the kitchen is closed tonight! oops!

Chocolate Chip Cookie Dough Brownies
Oh. My. Goodness. I've been wanting to make this recipe since July I think. I saw these on a couple food blogs I read and well...I love chocolate and I love cookie dough so I knew I had to make these. Last Tuesday was deemed an official Baking Therapy Evening. It just works for me. Some days I just have to bake something. It helps me feel better - the process and then of course the tasting of what I made. These weren't just a big hit with me- they were also a big hit with my small group (we celebrated Heather's birthday with them), my boys including Andy at home, and my Mom. So really. So, back to blogging.
ONE post in MAY?! Wow. That is an all time low! Gosh, how have all of you faithful readers survived without my enthralling posts?! Ha ha. Here are some general updates:
- Andy's sister Katie gets married this weekend!
- I'm working on Couch to 10K. I'm in week 3. It's been slow going with the end of the school year. Now I have no excuse. Hoping to run the 10K on the 4th of July.
- Tried a few new recipes lately. Carrot cake as a thank you to Andy for helping me with my classroom. Everybody that ate it said it was delicious! I agree! I substituted 1/2 cup of oil with 1/2 a cup of applesauce. It was still yummy. Thankfully we had some family over last night to help us eat it!
- Last night we made grilled fish tacos. They were ok. The fish just didn't have enough of a flavor. It was kind of bland. The corn/tomato/cilantro/lime juice relish was delicious though. This recipe came from my Everyday Food Magazine. It was our first time to try fish tacos. I'm not smitten. But might try them again...
- Summer is now officially here! I finished up on Thursday of this past week. I've been exhausted this weekend. Hopefully now I'll get myself and the boys into a routine of some kind. We've enjoyed a couple days at the pool this past week. Looking forward to many more!
- I have a confession to make. I bought some beautiful vegetable plants in the beginning of May. I never planted them. They are dead. Oh well. I've felt bad about it for a few weeks but thankfully It was less than $7 worth. I did plant the shade plants I bought. I don't have a garden spot. Maybe Drew will build me a raised bed for a garden next year... :) Now I can go throw them away and stop feeling bad!
- Last Sunday we hosted the Youth at a nearby park for their first on location summer sunday night thing. It was so much fun! We played Ultimate Frisbee (which is like football minus the tackling & football plus a frisbee). The boys were playing with us too. We grilled out hot dogs and had a picnic. It was a great time. Looking forward to more family picnics there this summer.
- The boys are all doing well! They are thrilled to have mommy home and I am trying to adjust to the stay at home mom thing for summer. Tyler is so busy and has NO fear. That is a VERY BAD thing! Luke and Wilson are like little fish when I take them swimming. They love the water and swim all over!

French Silk Chocolate Pie
1 sheet refrigerated pie crust
2/3 cup sugar
2 eggs
2 squares (1 oz each) unsweetened chocolate, melted
1 teaspoon vanilla extract
1/3 cup butter, softened
2/3 cup heavy whipping cream
2 teaspoons confectioners' sugar
whipped cream, chocolate curls, optional
1. Line a 7 in pie plate with pie crust. Prick bottom, trim and flute edges. Line shell with a double thickness of foil and bake at 450 for 4 minutes. Remove foil, bake 2-4 minutes longer until crust is golden brown. Cool on wire rack.
2. In a small saucepan, combine sugar and eggs until well blended. Cook over low heat, stirring constantly, until mixture reaches 160 degrees. Remove from heat. Stir in melted chocolate and vanilla until smooth. Let cool to luke warm (90 degrees), stirring occasionally.
3. In a small bowl cream butter until light and fluffy. Add cooled chocolate mixture; beat on high speed for 5 minutes or until light and fluffy.
4. In another large bowl beat cream until it begins to thicken. Add confectioners' sugar; beat until stiff peaks form. Fold into chocolate mixture.
5. Pour into crust. Chill for at least 6 hours before serving. Garnish with whipped cream and chocolate curls if desired. Refrigerate leftovers.
This pie was good! Took forever to get the egg mixture to 160 and then a long wait for it to cool down to 90 degrees...but well worth it! Andy loved it and didn't want to share it last night at our New Year's Eve party! But he did :) . I used my stand mixer for steps 3 and 4.

Thanksgiving Dinner #1
Tonight we had Thanksgiving with my side of the family at Cara and Jason's house. It was nice to all be together and the food was delicious! The kids had a great time together. I made a pumpkin pie and Sweet Potatoes with sage butter crumb topping, both new recipes. The pie was delicious. Probably the best pumpkin pie I've eaten before. The recipe was time consuming and I didn't know how it was going to turn out but it was good! Homemade pie crust and homemade whipped cream to boot! The sweet potatoes were not the brown sugar super sweet ones that we are used to. These were good, just not the same. It was just a recipe I'd been wanting to try for a while so I'm glad I did. I'll be making the usual brown sugar sweet potato casserole for Thursday.
Andy's side of the family is coming to our house for Thanksgiving this year! We're excited. Everyone is bringing different parts of the dinner. Looking forward to Thanksgiving Dinner #2!

Happy 32nd!
Andy's birthday was Friday. We had fun celebrating! Last weekend while his mom was in town we had his side of the family over to celebrate. His parents ordered pizza, I made a veggie tray and Mountain Mama Mudslide for dessert. One of his all time favorites! We celebrated his mom's birthday too which is in a few days.
This Friday night just our family went out to dinner. We gave him his present and celebrated with pumpkin dessert. Last night Andy and I went to see a movie after the boys were in bed while his uncle stayed at our house to baby-sit. We went and saw Due * Date which was funny. It reminded me a lot of Hang*over. It had some really funny parts - like truly laugh out loud funny. I used to avoid LOL because it wasn't true and it bugged me. But I've gotten over it and use it now too. Some parts that I didn't enjoy but overall it was funny! Happy Birthday, Andy!
I bought Andy his first Christmas present today! Christmas will be here before we know it!

Oreo Cheesecake Bars
So. Yeah. I made another dessert! At least I've tried a few new recipes lately! We had Andy's mom, dad, and sister over for dinner and it gave me an excuse to try this recipe. It is very easy and could easily be doubled if you want a 9x13 for a lot of people. I stuck with the 8x8 so we wouldn't have as many leftovers. Yum! Oreo Cheesecake Bars by Annie's Eats. A Fun Fourth! (Post # 600!!)
So this weekend we had a lot of family fun! We went downtown for the morning on Saturday. We met up with my parents and my sister's kids. They all had fun but it was hot! Sunday evening we had a cookout at Danny & Steph's with part of the Mc. Clan. Then we went to watch fireworks. It was a fun evening. I dug myself out of my cooking rut to try a new pie - Mississippi Mud Pie. It was pretty good! Oreo crust, chocolate ganache, toffee, coffee icecream etc. Yum! We had fun coming up with other ice cream pie variations. Follow the link to Annie's Eats for a picture and recipe! I did not make my own coffee icecream. I bought blue bell coffee icecream! I'm making another dessert from her blog tomorrow for a birthday celebration. Based on my luck with this food blog I'm sure it will be delicious! Annie's recipes are always good. Thick and Chewy Triple Chocolate Cookies
Yield: About 42 cookies
2 cups all-purpose flour
½ cup Dutch-processed cocoa powder
2 teaspoons baking powder
½ teaspoon salt
16 ounces semisweet chocolate, chopped
4 large eggs
2 teaspoons vanilla extract
2 teaspoons instant coffee or espresso powder
10 tablespoons (1¼ sticks) unsalted butter, softened but still cool
1½ cups packed light brown sugar
½ cup granulated sugar
12 ounces (about 2 cups) semisweet chocolate chips
1. Sift together the flour, cocoa, baking powder, and salt in a medium bowl; set aside.
2. Melt the chocolate in the microwave, stirring every minute until melted. In a small bowl, beat the eggs and vanilla lightly with a fork, sprinkle the coffee powder over to dissolve, and set aside.
3. With an electric mixer, beat the butter at medium speed until smooth and creamy, about 5 seconds. Beat in the sugars until combined, about 45 seconds; the mixture will look granular. Reduce the speed to low and gradually beat in the egg mixture until incorporated, about 45 seconds. Add the chocolate in a steady stream and beat until combined, about 40 seconds. Scrape the bottom and sides of the bowl wit a rubber spatula. With the mixer at low speed, add the dry ingredients and mix until just combined. Do not overbeat. Fold in the chocolate chips. Cover with plastic wrap and let stand at room temperature until the consistency is scoopable and fudge-like, about 30 minutes.
4. Meanwhile, adjust the oven racks to the upper- and lower-middle positions and heat the oven to 350 degrees. Line 2 baking sheets with parchment paper. Scoop the dough onto the prepared baking sheets with a 1¾-inch ice cream scoop, spacing the mounds of dough about 1½ inches apart.
5. Bake until the edges of the cookies have just begun to set but the centers are still very soft, about 10 minutes, rotating the baking sheets front to back and top to bottom halfway through the baking time. Cool the cookies on the sheets about 10 minutes, slide the parchment with cookies onto wire racks, and cool to room temperature. Cover one cooled baking sheet with a new piece of parchment paper. Scoop the remaining dough onto the parchment-lined sheet, bake, and cool as directed. Remove cooled cookies from the parchment with a wide metal spatula.

2. Melt the chocolate in the microwave, stirring every minute until melted. In a small bowl, beat the eggs and vanilla lightly with a fork, sprinkle the coffee powder over to dissolve, and set aside.
3. With an electric mixer, beat the butter at medium speed until smooth and creamy, about 5 seconds. Beat in the sugars until combined, about 45 seconds; the mixture will look granular. Reduce the speed to low and gradually beat in the egg mixture until incorporated, about 45 seconds. Add the chocolate in a steady stream and beat until combined, about 40 seconds. Scrape the bottom and sides of the bowl wit a rubber spatula. With the mixer at low speed, add the dry ingredients and mix until just combined. Do not overbeat. Fold in the chocolate chips. Cover with plastic wrap and let stand at room temperature until the consistency is scoopable and fudge-like, about 30 minutes.
4. Meanwhile, adjust the oven racks to the upper- and lower-middle positions and heat the oven to 350 degrees. Line 2 baking sheets with parchment paper. Scoop the dough onto the prepared baking sheets with a 1¾-inch ice cream scoop, spacing the mounds of dough about 1½ inches apart.
5. Bake until the edges of the cookies have just begun to set but the centers are still very soft, about 10 minutes, rotating the baking sheets front to back and top to bottom halfway through the baking time. Cool the cookies on the sheets about 10 minutes, slide the parchment with cookies onto wire racks, and cool to room temperature. Cover one cooled baking sheet with a new piece of parchment paper. Scoop the remaining dough onto the parchment-lined sheet, bake, and cool as directed. Remove cooled cookies from the parchment with a wide metal spatula.

Chocolate Sheet Cake
Um...yeah...this is a good chocolate sheet cake recipe. Not good for you but tasty! I used a large cookie sheet to bake the cake so it is a thin cake. I like the icing and I'm NOT an icing eater. I left the pecans out because I didn't have any but I think it would be good either way. Wilson told me I was the best cake baker ever! My teammates loved it too! Best news- sooo easy to make! It was mixed, baked, and ready to eat in 45 minutes.

Cookie Dough Truffles
Need I say more? Really?!
Yesterday I made Cookie Dough truffles from my favorite food blog Annie's Eats. They were very easy to make. You just need time for chilling the cookie dough. I dipped my in ghiardelli bittersweet chocolate instead of semi-sweet. She says you can use either. Andy loves those bittersweet chocolate chips so I went with that! They were fun and easy to make and quite tasty. Plus, if you just like to eat chocolate chip cookie dough...ahem...plain, this is a safe way to do so. Enjoy!

Latest Kitchen Escapades
Over the last few weeks I've tried a few new recipes. I've tried to plan some easier dinners to make life a bit easier. It's helped, but cooking and trying new recipes is something I really enjoy so I have to squeeze a few in somehow. Andy would totally go for a summer camp menu (Monday night is spaghetti, Tuesday is tacos, etc etc) week after week. But I couldn't do that. I need variety!
The first one I tried was Chewy Peanut Butter Cookies. They were good - definitely chewy and the honey flavor shines through. Not your typical pb cookie which are generally crunchy. I prefer chewy cookies so I thought these were good. And not overwhelmingly peanut buttery. I don't mind a subtle peanut butter flavor in desserts but don't care for a strong pb flavor.
This week we had Crash hot potatoes, with marinated pork tenderloin, green beans and rolls. I really liked them. Basically you boil new potatoes. Then put them on a cookie sheet and mash them slightly so they are flat. Then you brush olive oil on them and add salt and pepper and bake them. They get a little crunchy. I liked the crunchiness, that's what made them good! Andy didn't care for the crunchy so much but ate them.
This morning I tried Dulche de Leche coffee from PW's website. I just made enough for me. Andy didn't want any. It was good. I didn't take the time to do the chocolate on top or anything.
For Andy's Valentine dessert he chose a Maple-Butter Blondie. It's supposed to be like the dessert from Apple*bee's. He's eaten that before and really liked it. I get the Food Network Magazine and they always have a "Copy That!" recipe from a restaurant (auntie ann's soft pretzels, panera's broccoli-cheese soup, etc). So I'm making these blondies right now. Hopefully they'll be tasty!

A Good Saturday!
Saturday was a great day! I hung out at home all day - ran, did some cleaning, hung out with the boys and made brownies. Then last night Andy and I had a date night. We used a gift certificate I'd gotten at the end of school and mom/dad watched the boys. So we had a free date night which is always nice! It was so wonderful to just spend time with Andy over a nice dinner. Then we went to Tar*get to get Ty's birthday presents. It was so nice to have him all to myself! I've been so tired this weekend I've gone to bed a little after 10 both nights. Hopefully the extra sleep will help. I slept in till 9am today! Yesterday Andy and the boys started work on a treehouse in the back yard. It will have a post of it's own! Stay tuned! Today we went to church and now I'm going to finish cleaning the upstairs while Ty naps. Making a new crockpot dinner for tonight and will post it if it's good! I got it off of Cara's blog. So thrilled about this 3 day weekend! I have brought quite a bit of school work home so I need to make time for that today. I'm planning to rent Twilight and watch it again since I finished reading the book for the 2nd time this past week. It was even better the second time around!

Chocolate Peanut Butter Ice Cream
On Saturday I promised the boys we would make some homemade icecream. They had been wanting to all summer but it just didn't happen. I looked through Annie's Eats and found the recipe I knew we'd all enjoy. Luke requested chocolate! This was very yummy. The dutch processed cocoa really made it rich and chocolatey. It was so easy too!
2 cups half and half
1/4 cup Dutch process cocoa powder ( I found mine at Whol*e Foods)
1/2 cup sugar
pinch of salt
1/2 cup creamy peanut butter (I used Skippy Natural, our favorite!)
Whisk together half and half, cocoa powder, sugar and salt in a large saucepan. Heat the mixture, whisking frequently, until it comes to a full, rolling boil (it will start to foam up). Remove from the heat and whisk in the peanut butter, stirring until thoroughly blended.
Chill mixture thoroughly. Then freeze in your ice cream maker according to the manufacturer's instructions. We ate some then and froze the rest. The next day it was fozen completely just like icecream you buy at the grocery. Yum!
