Grilled Chicken Greek Salad

1 cup chicken broth
1/2 cup red wine vinegar
4 t sugar
4 t dried oregano
8 t olive oil
2 t salt
2 t pepper
4 garlic cloves, minced

4 skinless, boneless chicken breast pieces

romaine or green leaf lettuce
sliced cucumber
diced plum tomatoes
sliced red onion
feta cheese

Combine ingredients for dressing. Marinate chicken with some of the dressing for 15-20 minutes. Save enough for your salad. Grill or broil chicken then slice into pieces. Combine salad ingredients and top with chicken, feta cheese, and dressing.
This has been one of my favorites for a long time. I think it is from an old issue of Cooking Light. It is a low fat recipe and perfect for spring!
