From Food Network Magazine-
1 1/2 cups flour, 3 T sugar, 1/2 teaspoon salt
1 1/4 cups milk, 1/2 stick melted butter, 2 eggs, 1/4 teaspoon vanilla
Then whisk wet ingredients into the dry ingredients until just combined. Ladle 1/4 cupfuls onto hot skillet and cook until bubbly. Flip and cook until golden on the bottom.
These were great! Some other variations we want to try:
Buttermilk: Add to dry ingredients above 1 teaspoon baking powder, 1/2 teaspoon baking soda. Instead of milk use 1 1/4 cups buttermilk.
Pumpkin: Make buttermilk pancakes with 1 cup buttermilk. Add 1/2 cup pumpkin puree and 1/4 cup mini chocolate chips to the batter.
