These are great for dinner and the boys love them! They even have fresh spinach inside. Don't tell!
3 Cheese Calzones
1 can refrigerated pizza dough
1 cup fresh ricotta
1 cup shredded mozzarella
1/4 cup shredded parmesan
1 bunch spinach, thick stems removed and roughly chopped (or just buy a bag!)
1/4 tsp. black pepper
1/4 pound thinly sliced salami
2 T olive oil
jarred marinara sauce, warmed
Heat oven to 400. Divide dough into 4 equal portions and roll out into 8 inch rounds. In a large bowl combine the 3 cheeses, spinach, and 1/4 teaspoon pepper. Layer the salami on one side of each round of dough and top with cheese mixture. Fold the dough over the filling and pinch the edges to seal. Brush the tops of the calzones with oil. Transfer to a parchment lined baking sheet and back until golden, 12-15 minutes. Serve with marinara sauce for dipping.
The second time we made this we used 2 cans of pizza dough, and broke each into 3 equal pieces to get 6 calzones. I also used bagged fresh spinach to save time.

mmmmmm - those sound yummy. I will have to give those a try. If you have a bread machine I have included the recipe I use for pizza dough. It is yummy and very easy.
1 cup warm water, 3/4 t salt, 4 t olive oil, 3 c bread flour, and 1 t bread machine yeast. I have a pizza dough cycle that runs 50 minutes, you could also use a regular dough cycle as well. Pull it out and stretch/roll it into a circle. for a thicker crust you can let it rise for 10 minutes before baking it in the oven (400 degrees). If I am making pizza I bake it for 10 minutes before I top it.
